Hi there guys, I recently bought some xylitol to use in some recipes instead of sugar. Does anyone have any success stories? I made riceflour scones with nuts and raisons and used some xylitol, it was really yummy. Let me know if anyone has made anything else. Patty.

Good morning Patty, seems we are on at the same time! How are you? Just thought I would ask, is Xylotol the substance you find in gum? I just bought a packet of the natural sugar and will be trying to use it instead of sugard in this muffin recipe which has nuts etc so will let you know how I get on! Rosie x

Hi Rose, looks like you are an avid baker like me! Yes xylitol is used in gum, it is a quarter of the calories compared to sugar. I don't think you can use Xylitol in cake recipes, they just don't keep their lightness. Must be the chemical reaction between eggs and sugar that allow it to be light and fluffy, I don't think xylitol can allow that. Hope this helps you dear. x
