I just discovered that this favourite japanese dish of mine is actually really easy to cook. If you haven't tried okonomiyaki before then you should - they are DELICIOUS. I ate three all by myself even though they have shrimp in them and I don't normally eat meat. Okonomiyaki translates to "as you want" or something like that so substitution is (apparently) encourged, eg. you can use chicken or some other meat instead of the shrimp. They are like a very tasty, savoury pancake. Ingredients 1 1/3 cups water half a teaspoon hondashi (bonito flavored powdered soup stock) 3 eggs 2 cups flour a tin of shrimp, drained and rinsed some chopped chives or spring onion 1/3 of a cabbage, shredded Method 1. Mix the hondashi in the water and stir well 2. Add the flower and beaten egss and mix until the lumps disappear 3. Mix in the rest of the ingredients. The cabbage should be added last. Mix it all in well. 4. Drop a portion of batter onto an oiled and heated frying pan and flatten it down to a pancake-like-shape with an appropriate utensil. Fry over medium heat. 5. Turn it when the edges start to change colour and then cook the other side. Both sides should be golden-brown 6. Put it on a plat and top with some squiggles of brown japanese sauce (sweet soy would do), squiggles of japanese mayo, some small dollops of red chilli paste and a sprinkling of ao-nori or some other dried seeweed flake seasoning. YUM!
